All 15 recipes are onion-free, garlic-free (hing and garlic-infused oil only), egg-free, meat-free, and low in fat. Every idli here is steamed, never fried.

Fermentation basics (read once, applies to most recipes below)
- Classic ratio: 3-4 parts idli rice (chawal) to 1 part dal, by volume. A thick, dropping-consistency batter steams softer than a thin one.
- Soak separately: rice 6-8 hours, dal (with fenugreek/methi seeds) 4-6 hours, in plain water, no salt yet.
- Grind: dal and methi first, to a smooth, fluffy, almost whipped paste — this traps the air that makes idli soft. Rice next, slightly coarse. Mix both by hand.
- Salt after fermentation, not before. Salt slows the fermenting bacteria. Add it once the batter has risen.
- Temperature: batter ferments best at 25-32°C. In Meerut's summer heat (40-45°C), it can over-ferment and turn sharply sour in as little as 4-5 hours — check at the 4-hour mark instead of leaving it overnight. In AC or winter, 10-12 hours is normal.
- IBS-D note: steam the batter at its first good rise — doubled in volume, small bubbles on the surface. Over-fermented batter is more sour (more organic acids, more gas) and is more likely to upset a sensitive gut. Once it has risen well, refrigerate to stop fermentation rather than letting it run longer.
- Moong dal, oats, quinoa, ragi, and semolina batters have less natural mucilage than urad dal and ferment less reliably on their own. Several recipes below use curd (dahi) plus Eno fruit salt or soda for a quick steam-ready lift instead of an overnight ferment — still soft, less planning.
- Steaming: grease moulds lightly with ghee, steam 10-12 minutes on medium heat in a covered steamer or idli stand, rest 2 minutes before unmoulding. A toothpick should come out clean.

Paneer and curd (dahi) are a Blinkit/dairy-counter buy — check paneer freshness and monitor his own tolerance, per his lactose-sensitivity note.
